Yummy dinner + dessert

The other night, I made a yummy dinner with Sean, of the Three Bean Chili from Vegan Planet. I also made dessert–the Raspberry Oatmeal Bars from Joy of Vegan Baking.

The chili was rather good, and the only alteration I made to the recipe was the addition of some chipotle peppers (I think 2, from a can of chipotles in adobo sauce) to give it a little more bite. The red hot chilis I used weren’t hot enough (but that could be due to the fact that I took the seeds and white part out before I added them to the pot).

As per the suggestion of the author, I cooked up some Pumpkin Biscuits (from Vegan Planet) to go with the chili. They were very mild tasting, and they complemented the chili well. I didn’t have the stamina to make cornbread, or else I would have. Oh, also, I halved the Pumpkin Biscuit recipe, since I didn’t need 24 biscuits.

Anyway, here’s the result:

While the bicuits were cooking, I prepared the Raspberry Oatmeal Bars. I stuck them in the oven after the biscuits were done and they cooked while Sean and I ate the chili. The only thing I would change about the bars is maybe add a little more butter to the (top) crust. It came off a little too crumbly on the top. But other than that, these were extremely delicious! And I think they took like 5 minutes to prepare. I will most definitely make this recipe again, and try out different types of jams with it.
